Ingredients:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup red wine (such as Merlot or Cabernet Sauvignon)
- 1/2 cup hot brewed coffee
- For frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup red wine
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Stir in the red wine until smooth, then add the hot coffee and mix until the batter is well combined and smooth.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack before removing it.
- While the cake is cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, red wine, cocoa powder, and vanilla extract, and beat until smooth and creamy.
- Once the cake is completely cool, frost the top and sides with the prepared frosting. Serve and enjoy!
